This cheese shares certain visual and organoleptic features with Taleggio in that they are both produced using a similar technique. The light brown rind is rough and thin. Thanks to a lengthy aging of over 60 days as well as the cheese’s round shape, the paste is extremely creamy and easy to melt. It has an intense yet mild dairy flavor that is very pleasant on the palate.
