This cheese is produced mainly in the Milan and Pavia area, and at one time particularly around Lodi. Originally known by the Latin term “Crescenza,” today it is also called “Stracchino.” It has a creamy yet dense paste that is more similar to the original product and therefore somewhat different from the softer and more buttery type of stracchino that has become widespread in recent years. Our Stracchino has a fresh, mild and extremely milky flavor with a slightly tangy aftertaste.
