Rosso Imperiale is a unique cheese born of the ambition to mix traditional Gorgonzola with sun-wilted grapes. The result is a marbled cow’s milk cheese with a sharp flavor that is aged for approximately 90 days and left to mature for an additional three months in sun- wilted wine marc. This cheese’s characteristic sharpness is mellowed by the pleasant sweetness of the grapes, with their rich hints of apricot and almond. This bold pairing grants the finished product a harmonious blend of flavors and aromas that makes it truly unique. The rind is moist and covered in marc, while the paste is solid, straw-yellow with green veining and permeated by the straw wine in which it is aged.
